Smashed Chickpea Avocado Salad Sandwich

Smashed Chickpea Avocado Salad Sandwich is Vegan, Healthy, and easy to prepare recipe. It’ high in fiber, crunchy and tasty. This simple sandwich is a great idea for a quick dinner, your kid school lunch breaks, picnic, travel, to take to your work, etc. And… It takes only 10 minutes to make.

Here is the basic recipe, but, you can experiment with different other ingredients, like radishes, cucumbers, grated carrots, fresh herbs (basil, cilantro…), etc.

If you don’t want to use canned chickpeas, you should do some Homework first: cook chickpeas when you have a bit more time at your disposal and have them ready for sandwiches & salads during the week. Store your ready (cooked, drained and chilled) chickpeas in a glass container in the fridge for several days.


Healthy Breakfast with Toasted Bread

Chickpeas in a Glass Bowl

-1 15-oz. can chickpeas, rinsed, drained, and skinned
-1 large, ripe avocado
-1/4 cup chopped fresh cilantro
-2-3 tbsp scallion, roughly chopped
-Juice of 1 lime
-Salt and pepper, to taste
-Bread of your choice
-Sandwich toppings (I use lettuce and tomato)


A halved Avocado on a Wooden Board– In a medium bowl, smash the chickpeas and avocado together using a fork.

– Add in the cilantro, scallion, and lime juice and stir.

– Season with salt and pepper.

– Spread onto bread and top with your favorite sandwich toppings.

Enjoy your rich and crunchy sandwich!
