LENTIL SOUP RECIPES

Lentils are healthy, meaty-tasting and are perfect for making flavorful vegetarian soups like Classic Lentil Soup (Basic), with aromatic vegetables (onion,  carrot and garlic), aromatic herbs (oregano, thyme) and tomato for an extra boost of flavor and vitamins. There are various Lentil Soup Recipes, but, the “philosophy” of preparing is the same. The basic recipe will help you make variations, each time enjoying new and original flavors.

Prepare your lentil soup ingredients and have them ready before you start cooking!

1. BASIC LENTIL SOUP RECIPE

Easy Healthy Mediterranean Lentil Soup

Servings: 4         Prep time: 10 mins        Cook time: 45 mins

Ingredients:

  • 2-3 tbsp olive oil
  • 1 medium onion, chopped (white, brown, yellow)
  • 2 carrots, peeled and chopped
  • 3 garlic cloves, pressed or minced
  • 2 teaspoons ground cumin
  • ½ teaspoon dried thyme
  • ½ tbsp oregano
  • 1 large can (28 ounces) diced tomatoes, drained
  • 1 cup brown or green lentils, picked over and rinsed
  • 4 cups vegetable broth
  • 2 cups water
  • 1 teaspoon salt
  • pinch red pepper flake
  • black pepper

INSTRUCTIONS:

  • Heat the olive oil in a large pot over medium-high heat. Add chopped onion and carrot and cook, stirring often, until it begins to soften. Add garlic, cumin, thyme and cook about 30 seconds, stirring constantly.
  • Add tomatoes, lentils, water, oregano, vegetable broth, salt,  black pepper, a pinch of red pepper flakes. Raise the heat and bring the mixture to a boil, then partially cover the pot and reduce heat to maintain a gentle simmer. Cook for 30-35 minutes, or until the lentils are tender but still holds their shape. While cooking, if you notice that most of the liquid has been absorbed, add in ½ or a cup of hot water.
  • Remove the pot from heat. 
  • Serve immediately. Decorate with parsley and add 1 teaspoon lemon juice or red wine vinegar.

2. LENTIL SOUP WITH DRIED TOMATOES RECIPE

Use the Basic Lentil soup recipe.  Instead of onion, carrot and celery, add 1/2 cup dried tomatoes and a tablespoon of minced garlic. Proceed with the recipe.

3. BEEF LENTIL SOUP RECIPE 

Healthy Mediterranean Lentil Soup Recipes

Servings: 8      Prep time: 15 mins      Cook time:  70 mins

Ingredients:

  • 3tbsp olive oil
  • 1 pound beef chuck, cut into cubes
  • 2 cups dried lentils
  • 1 stalk celery, chopped
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 4 cloves garlic, chopped
  • 1 teaspoon dried oregano
  • 2 (32 ounces) cartons chicken broth
  • 1 (28 ounces) can diced tomatoes/ if have fresh tomatoes – even better!
  • ¼ cup fresh parsley, chopped
  • ½ cup grated Parmesan cheese
  • salt

Instructions:

  • Heat the olive oil in a large pot over medium-high heat. Add beef cubes to the hot oil, and brown on all sides. Once browned, remove the beef and set aside. Stir in the carrot, onion, celery, garlic, oregano. Cook and stir until the onion has softened.
  • Pour in the chicken broth, tomatoes and beef. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer for about 25-30 minutes.
  • Add the lentils and continue simmering until the lentils are tender (35-40 minutes). Season with salt, then stir in the parsley. Decorate with Parmesan cheese.

Ready to serve!

4. LENTIL SOUP WITH SAUSAGE OR BACON

Mediterranean Lentil Soup with Sausage

Servings: 8    Prep time: 15 mins    Cook time:  50 mins

Ingredients:

  • 3tbsp water (instead of olive oil)
  • ½ pound chopped sausage, bacon or pancetta
  • 2 cups dried lentils
  • 1 stalk celery, chopped
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 4 cloves garlic, chopped
  • 1 teaspoon dried oregano
  • 32-ounce vegetable broth
  • 1 (28 ounces) can diced tomatoes/ if have fresh tomatoes – even better!
  • ¼ cup fresh parsley, chopped
  • almost no salt

Instructions:

  • Heat 3 tbsp water (instead of olive oil) in a large pot over medium-high heat. Stir in the onion, until has softened.
  • Pour vegetable broth, tomatoes, lentils, celery, garlic, oregano. Bring to a boil over high heat, then reduce heat to medium-low, cover and simmer for about 25 minutes.
  • Add sausage or bacon and continue cooking for about 20-25 minutes.
  • Season with a bit of salt and stir in the parsley.
